This dish slightly has a similarity to Pork Adobo which is one of the most famous dishes in the Philippines.
I really want and enjoying eating Paksiw Na Pata. I like how the fat of the pork renders in my mouth each of the bites that I take. I believe that the softness of the meat until it was almost part ways on the bone, seems like the way that’s why it was delicious.
Here is the preparation on how to cook Paksiw Na Tapa:
There are several methods on how to cook this dish. This version that we will present to you will propose to pre-boil the pork hock first until impurities and other dirt surfaces. After that, drop the water. After the first boiling, I need an additional distance to wash the pork hocks by the use of water.
This recipe also doesn’t need any garlic and saute onions. But you can always add one of them if you wanted.
Start to boil the bay leaves and whole peppercorn in the water. Combine fresh garlic and soy sauce. After that, you should prepare the pre-boiled pork hock. Proceed on boiling in medium heat until you notice that the pork was slowly tenderized. It will accumulate around 2 hours to fully get the pork hock soft. But when you will use a pressure cooker it can help to decrease the time by higher than a half.
Once the pork becomes tender you can already combine the vinegar. After that, mix the banana blossoms and sugar to it. Sprinkle it by salt.
It is better if you will combine some pork cube or use pork broth to get the dish more delicious. You can serve it with rice.
The amount depends on what you wanted when you were doing the sauce. The texture of the hock was the most important to this dish. The meat should be soft.
Ingredients:
- 2 lbs Pork hock Pata, sliced crosswise
- 1 teaspoon garlic crushed
- ½ cup of soy sauce
- 2 cups of water
- 3 tablespoons vinegar
- ½ cup brown sugar
- 100 grm. banana blossoms dried, soaked in water
- 5 pieces of dried bay leaves
- 1 tablespoon whole peppercorn
- Salt to taste
Instructions:
- Boil 6 cups of water and combine the pork hock in the pan. Proceed on boiling for about 15 minutes. Drop the water and use water to rinse off the pork until all the dirt is clean.
- Boil water in the pot and combine the dried bay leaves and peppercorn.
- Mix the soy sauce in the pot and combine the garlic.
- Mix the pork hock slice and boil it for around 1-1.5 hours or you can cook it by the use of pressure cooker that only needed 30 minutes.
- Combine the vinegar and cook for around 10 minutes.
- Mix the banana blossoms and cook for 5-7 minutes.
- Combine the brown sugar and salt and cook for 2 minutes.
- Put it on the serving plate and serve it. Enjoy!
